Pancakes Raw Center
Your pancakes are browned outside but raw in the center because the heat was too high. Lower heat and finish gently.
raw center overbrowned surface vegetarian
Ingredients on hand
- undercooked pancakes
- skillet
- butter
- oven
- syrup
Why it happened
High heat sets the exterior before the inside cooks. A low oven finish brings the center up to temperature.
The fix
- 1 move pancakes to a 300F oven for 5 minutes
- 2 lower skillet heat to medium for the next batch
- 3 serve with syrup or butter to hide any remaining softness
If it's still wrong
- cut into pieces and pan-fry for pancake bites
- use as a base for a breakfast trifle
Prevent next time
- cook over medium heat and wait for bubbles to pop
- use a thin, even layer of batter
Notes
Why this works
Gentle heat gives the batter time to set through the center. An oven finish avoids burning the exterior while the inside cooks.
Substitutions
- butter → oil
- syrup → jam
