Farro Mushy
Mushy, waterlogged farro was either overcooked or not drained after cooking — here's how to rescue it and serve a good grain dish.

Ingredients on hand
- farro (semi-pearled or whole)
- vegetable or chicken stock
- olive oil
- lemon juice
- fresh herbs (parsley, thyme)

Why it happened
Farro that turns mushy was cooked past the point where its bran layer (in semi-pearled or whole farro) could protect the starchy interior. Once the starch gelatinizes fully, the grains become soft and cohesive. Pearled farro (bran fully removed) is most susceptible to mushiness. Draining and drying stops the cooking process and removes the water that was actively softening the starch.
The fix
- 1 Drain farro immediately if it's still in cooking liquid — spread on a baking sheet or dry bowl and let sit for 5 minutes to steam off excess moisture
- 2 Drizzle with olive oil and toss — fat coats the soft grains and prevents them from sticking into a mass
- 3 Toast in a dry skillet over medium heat for 3–4 minutes, tossing occasionally — heat drives off surface moisture and adds nutty flavor
- 4 Season aggressively with salt and lemon juice — these heighten the perception of texture by activating contrast
If it's still wrong
- Use mushy farro as a base for a savory porridge or grain bowl — season with miso, soy sauce, and a soft-boiled egg, and serve hot. Soft farro is actually excellent in this context.
- Blend mushy farro with roasted vegetables and stock to make a thick grain soup with excellent body.
Prevent next time
- Cook farro pasta-style in a large pot of salted water and drain when still al dente (firm to the bite) — over-cooking in a small amount of water is the most common cause of mushiness.
- Whole farro takes 45–60 minutes; semi-pearled takes 25–35 minutes; pearled takes 15–20 minutes. Know which type you have.
