Why it happened
The top gets the most radiant heat and dries out first. Removing the overbaked layer and topping restores moisture.
The fix
- 1 shave off the dark top with a sharp knife
- 2 spread a thin sour cream topping to cover the surface
- 3 chill 1 hour to set and smooth the finish
If it's still wrong
- Cover with fruit compote or chocolate ganache.
- Serve as parfait layers where color is hidden.
Prevent next time
- Bake in a water bath at 325F.
- Turn off the oven and cool with the door cracked.
