Ingredients on hand
- hard caramel
- heavy cream
- butter

Why it happened
Caramel hardens when the sugar concentration is too high. Adding cream increases water content and lowers the setting point.
The fix
- 1break the caramel into pieces and warm with 1/4 cup cream over low heat
- 2stir in 1 tablespoon butter for smoothness
- 3add a pinch of salt and cool slightly before serving
If it's still wrong
- Crush into shards and use as a crunchy topping.
- Melt into coffee or hot chocolate for a caramel drink.
Prevent next time
- Stop cooking at 225 to 235F for sauce consistency.
- Remove from heat early; carryover heat continues cooking.
