Caramel Too Hard

Why it happened

Caramel hardens when the sugar concentration is too high. Adding cream increases water content and lowers the setting point.

The fix

  1. 1break the caramel into pieces and warm with 1/4 cup cream over low heat
  2. 2stir in 1 tablespoon butter for smoothness
  3. 3add a pinch of salt and cool slightly before serving

If it's still wrong

  • Crush into shards and use as a crunchy topping.
  • Melt into coffee or hot chocolate for a caramel drink.

Prevent next time

  • Stop cooking at 225 to 235F for sauce consistency.
  • Remove from heat early; carryover heat continues cooking.

Why this works
