Cheesecake Cracked Top

A cracked cheesecake surface came out of the oven too fast or was overbaked — here's how to cover the cracks beautifully and bake a smooth top next time.

Ingredients on hand

Why it happened

Cheesecake cracks when the custard sets too firmly and contracts during cooling. The top surface cools faster than the center, creating tension between layers that tears the surface. This is caused by overbaking, opening the oven door before the cheesecake has set, or removing the hot cheesecake directly to the refrigerator (thermal shock). The traditional fix of a sour cream topping is designed precisely for this purpose — it's not decorative, it's structural.

The fix

  1. 1Cover the cracks with a sour cream topping — mix 1 cup sour cream with 2 tablespoons sugar and vanilla, spread over the cooled cheesecake and smooth with an offset spatula
  2. 2Top with fruit compote, fresh berries, or a glossy ganache — any topping completely conceals cracks
  3. 3Do not attempt to fill cracks while the cheesecake is warm; wait until fully cooled
  4. 4Chill for at least 6 hours after covering — the topping sets and integrates with the surface

If it's still wrong

  • Bake a swirl of sour cream into the top of the cheesecake for 5 minutes at the end of baking — this traditional technique sets directly over cracks and looks intentional.
  • Slice into bars and call it "New York Cheesecake Bars" — cracks in sliced cheesecake are completely invisible.

Prevent next time

  • Turn off the oven when the cheesecake is just set at the edges but still jiggly in the center, then leave the door cracked for 1 hour — the gradual temperature drop prevents contraction cracks.
  • Use a water bath — the moist heat prevents the surface from drying and cracking during baking.
