- burnt caramel
- cream
- butter
- salt

Why it happened
Burnt sugar creates bitter compounds. Dilution and fat reduce the intensity, and straining removes the darkest particles.
The fix
- 1 carefully stir in 2 tablespoons warm cream to dilute
- 2 add 1 tablespoon water and a pinch of salt
- 3 strain out any black bits before serving
If it's still wrong
- use as a bitter-sweet glaze on nuts
- blend into coffee for a smoky note
Prevent next time
- pull caramel at light amber
- remove from heat early; carryover darkens it

Why this works
