Caramel Burnt

  • cream
  • butter

  • water

Why it happened

Burnt sugar creates bitter compounds. Dilution and fat reduce the intensity, and straining removes the darkest particles.

The fix

  1. 1 carefully stir in 2 tablespoons warm cream to dilute
  2. 2 add 1 tablespoon water and a pinch of salt
  3. 3 strain out any black bits before serving

If it's still wrong

  • use as a bitter-sweet glaze on nuts
  • blend into coffee for a smoky note

Prevent next time

  • pull caramel at light amber
  • remove from heat early; carryover darkens it

Why this works

Caramel goes from perfect to burnt quickly. Adding warm cream and water lowers the concentration of bitter compounds and makes the flavor more manageable.
