Zucchini Watery

Ingredients on hand

  • cooked zucchini
  • salt
  • skillet
  • olive oil
  • garlic

Why it happened

Zucchini is mostly water. Salting draws out moisture and high heat evaporates it quickly.

The fix

  1. 1 sprinkle with salt and let sit 5 minutes, then blot dry
  2. 2 sear in a hot skillet with oil for 2 minutes per side
  3. 3 finish with garlic or herbs

If it's still wrong

  • blend into a soup or sauce
  • mix into a stir-fry where softness is acceptable

Prevent next time

  • cook in small batches
  • add salt after browning
