Ingredients on hand
- cooked zucchini
- salt
- skillet
- olive oil
- garlic
Why it happened
Zucchini is mostly water. Salting draws out moisture and high heat evaporates it quickly.
The fix
- 1 sprinkle with salt and let sit 5 minutes, then blot dry
- 2 sear in a hot skillet with oil for 2 minutes per side
- 3 finish with garlic or herbs
If it's still wrong
- blend into a soup or sauce
- mix into a stir-fry where softness is acceptable
Prevent next time
- cook in small batches
- add salt after browning
