Why it happened

Zucchini is mostly water. Salting draws out moisture and high heat evaporates it quickly.

The fix

  1. 1sprinkle with salt and let sit 5 minutes, then blot dry
  2. 2sear in a hot skillet with oil for 2 minutes per side
  3. 3finish with garlic or herbs
