Vinaigrette Too Oily

Your vinaigrette tastes heavy because there is too much oil. Add acid and emulsify to lighten it.

Part of sauces cooking fixes and bland food fixes .

oily mouthfeel flat flavor vegetarian gluten-free

Ingredients on hand

  • vinaigrette
  • vinegar
  • mustard
  • lemon juice
  • salt

Why it happened

Excess oil coats the palate and dulls flavor. Acid and emulsifiers rebalance the dressing and make it feel lighter.

The fix

Save
  1. 1 whisk in 1 tablespoon vinegar to balance
  2. 2 add 1 teaspoon mustard to emulsify
  3. 3 finish with lemon juice and salt

If it's still wrong

  • use on roasted vegetables where oil is welcome
  • dilute with a spoon of water

Prevent next time

  • measure oil carefully
  • emulsify with mustard from the start

Notes

Why this works

Acid cuts through oil and restores balance. Emulsifiers break the oil into smaller droplets, making the dressing taste lighter.
