- mustard
- lemon juice

Why it happened
Excess oil coats the palate and dulls flavor. Acid and emulsifiers rebalance the dressing and make it feel lighter.
The fix
- 1 whisk in 1 tablespoon vinegar to balance
- 2 add 1 teaspoon mustard to emulsify
- 3 finish with lemon juice and salt
