Ingredients on hand
- tofu
- paper towels
- skillet
- oil
- soy sauce
Why it happened
Tofu holds a lot of water. Pressing removes moisture and high heat browns the surface, giving a firmer texture.
The fix
- 1 press tofu between towels for 10 minutes
- 2 sear in a hot oiled skillet for 2 minutes per side
- 3 finish with soy sauce for flavor
If it's still wrong
- crumble into a tofu scramble
- blend into a creamy sauce
Prevent next time
- press before cooking and use extra-firm tofu
- cook in a hot pan without crowding

Why this works
Removing water lets the tofu brown instead of steam. A hot sear creates a firmer outer layer and better texture.
