Tart Shell Cracked

Ingredients on hand

  • baked tart shell
  • melted chocolate
  • spatula
  • jam
  • berries

Why it happened

Cracks open when the crust dries out and shrinks. A chocolate layer acts as edible glue and a moisture barrier.

The fix

  1. 1 spread a thin layer of melted chocolate over the cracks
  2. 2 chill 5 minutes to set the seal
  3. 3 add the filling and top with berries

If it's still wrong

  • crumble and use as a crust for parfaits
  • serve as rustic tart pieces with extra topping

Prevent next time

  • do not overbake; pull at light golden color
  • rest the dough before baking to relax gluten

Why this works
