Ingredients on hand
- baked tart shell
- melted chocolate
- spatula
- jam
- berries
Why it happened
Cracks open when the crust dries out and shrinks. A chocolate layer acts as edible glue and a moisture barrier.
The fix
- 1 spread a thin layer of melted chocolate over the cracks
- 2 chill 5 minutes to set the seal
- 3 add the filling and top with berries
If it's still wrong
- crumble and use as a crust for parfaits
- serve as rustic tart pieces with extra topping
Prevent next time
- do not overbake; pull at light golden color
- rest the dough before baking to relax gluten
