Sticky Rice
Your rice turned gummy and clumped together instead of being fluffy with separate grains. Excess surface starch and too much water are the usual causes. These fixes dry it out and separate the grains.
Ingredients on hand

Why it happened
Rice grains are coated in loose amylopectin starch. Too much water causes this starch to over-gelatinize and act as a glue between grains. Stirring during cooking breaks the grain surfaces and releases even more starch, making the problem worse. Short-grain varieties have more amylopectin and are naturally stickier than long-grain types.
The fix
- 1 spread the rice in a thin layer on a sheet pan and let it sit uncovered for 5 minutes to release steam
- 2 fluff with a fork using a gentle lifting motion to separate grains without mashing them
- 3 if still gummy, place the sheet pan in a 300F oven for 5 minutes to dry further
If it's still wrong
- Spread cold sticky rice in an oiled pan and fry over high heat for 4-5 minutes to make crispy fried rice.
- Use the sticky rice for rice pudding, congee, or arancini where the gummy texture is desirable.
Prevent next time
- Rinse rice in 3-4 changes of cold water until the water runs mostly clear to remove surface starch.
- Use the correct water ratio for your rice type (1:1.5 for long-grain, 1:1.25 for basmati/jasmine) and do not lift the lid during cooking.

Why this works
Spreading the rice thin maximizes surface area, allowing trapped steam to escape rather than condensing back into the grains. Steam is the main enemy of fluffy rice because it keeps the surface moist and the starch gel active. Fluffing with a fork rather than a spoon or spatula is important because a forkβs tines separate grains with minimal compression, while flat utensils smash grains together and release more starch. The low oven temperature (300F) gently dehydrates the surface starch without browning or cooking the rice further, firming up the exterior of each grain so they stop sticking.
