- skillet

Why it happened
Overcooked spinach releases mucilage and water. High heat evaporates moisture and improves mouthfeel.
The fix
- 1 spread in a hot skillet and cook 1 minute to evaporate moisture
- 2 add olive oil and garlic for flavor
- 3 finish with lemon juice
