Why it happened

Dense vegetables need more time and liquid to soften. A covered simmer traps steam and speeds cooking.

The fix

  1. 1 add 1/4 cup water or stock and simmer covered for 8 minutes
  2. 2 taste and adjust salt once tender
  3. 3 finish with herbs for freshness

If it's still wrong

  • Blend a portion of the soup to create a smoother base.
  • Remove vegetables and saute separately until tender, then add back.

  • Cut vegetables evenly and add dense ones first.
  • Keep the soup at a gentle simmer, not a boil.
