Soup Too Lemongrassy
Your soup tastes grassy and sharp because there is too much lemongrass. Remove it and balance with fat and sweetness.
overpowering lemongrass sharp finish vegetarian gluten-free
Ingredients on hand
- lemongrass soup
- coconut milk
- sugar
- lime juice
- salt
Why it happened
Lemongrass is intense and grassy. Fat and sweetness round the flavor so it feels less sharp.
The fix
- 1 remove any lemongrass stalks or pieces
- 2 add 2 tablespoons coconut milk to soften the flavor
- 3 add a pinch of sugar and lime to balance
If it's still wrong
- dilute with unsalted stock
- serve over rice to spread the flavor
Prevent next time
- use a smaller amount and remove the stalk early
- bruise the stalk lightly instead of mincing
Notes
Why this works
Lemongrass oils are powerful. Removing the stalk and adding fat and sweetness reduces the sharpness without dulling the soup.
Substitutions
- coconut milk → cream
- lime juice → vinegar
