  • coconut milk
  • sugar
  • lime juice
  • salt

Why it happened

Lemongrass is intense and grassy. Fat and sweetness round the flavor so it feels less sharp.

The fix

  1. 1 remove any lemongrass stalks or pieces
  2. 2 add 2 tablespoons coconut milk to soften the flavor
  3. 3 add a pinch of sugar and lime to balance

If it's still wrong

  • dilute with unsalted stock
  • serve over rice to spread the flavor

Prevent next time

  • use a smaller amount and remove the stalk early
  • bruise the stalk lightly instead of mincing
