Soggy Noodles in Soup
Your noodles went mushy because they sat in hot broth too long. Swap in fresh noodles and keep them separate.
mushy noodles starchy broth dairy-free
Ingredients on hand
- noodle soup
- fresh noodles
- colander
- neutral oil
- herbs
Why it happened
Noodles keep absorbing liquid as they sit, which makes them soft and turns the broth starchy. Separating them stops the absorption.
The fix
- 1 strain the soup to separate noodles from broth
- 2 rinse the noodles briefly, toss with a little oil, and set aside
- 3 add fresh noodles to the hot broth and combine just before serving
If it's still wrong
- Crisp the old noodles in a skillet and use as a topping.
- Serve the broth over rice instead of noodles.
Prevent next time
- Cook noodles separately and add them only at serving time.
- Undercook noodles by 1 minute if they will sit in broth.
Notes
Why this works
Noodles are like sponges. Once they are in hot liquid, they keep absorbing water and soften quickly. Keeping them separate preserves texture and keeps the broth clear.
Substitutions
- fresh noodles → cooked rice
