Soggy Fries

Why it happened

Crispy fries depend on a dehydrated starchy exterior. When fries steam (from overcrowding, too-low oil temperature, or sitting in a covered container), the moisture softens that crust. The starch layer absorbs water and goes from crunchy to limp.

The fix

  1. 1spread fries in a single layer on a sheet pan with space between each fry
  2. 2bake at 450F or air-fry at 400F for 5-7 minutes until the exterior is golden and audibly crisp
  3. 3season with salt immediately after removing from the oven while the surface is still hot

If it's still wrong

  • Pan-fry in 1 tablespoon oil over high heat for 2-3 minutes per side, pressing gently with a spatula.
  • Broil on the top rack for 2-3 minutes, watching carefully to avoid burning.

Prevent next time

  • Soak cut potatoes in cold water for 30 minutes to remove surface starch, then dry thoroughly before frying.
  • Fry in two stages - 325F for 5 minutes to cook through, then 375F for 2-3 minutes to crisp.

Why this works

High dry heat (450F oven or 400F air fryer) rapidly evaporates surface moisture from the fries. As water leaves the exterior starch layer, it re-crisps through dehydration, essentially re-frying the surface without oil. Spacing the fries apart is critical because touching fries trap steam between them, preventing the surfaces from drying. An air fryer works particularly well because the circulating hot air mimics the convection of deep frying. Salting immediately after cooking works because the hot, slightly moist surface dissolves salt crystals on contact, bonding them to the fry. If you salt too late, the crystals just fall off.
