  • undercooked shrimp
  • skillet
  • oil
  • salt
  • lemon

Why it happened

Shrimp cook quickly and become opaque when the proteins set. A brief hot sear finishes them without overcooking.

The fix

  1. 1sear in a hot skillet with oil for 30 to 45 seconds per side
  2. 2remove as soon as they turn opaque and pink
  3. 3finish with salt and lemon

If it's still wrong

  • simmer briefly in a sauce until opaque
  • add to a soup at the end of cooking

Prevent next time

  • cook just until they curl into a loose C shape
  • use high heat and short time
