Scones Too Dry

Why it happened

Scones lose moisture quickly once overbaked. A short steam in foil rehydrates the crumb without making the exterior soggy.

The fix

  1. 1 brush the tops with 2 tablespoons warm cream or milk
  2. 2 wrap in foil and warm at 300F for 5 minutes to steam-soften
  3. 3 serve with butter and jam to add moisture

If it's still wrong

  • Split and toast for a crisp texture, then top like a shortcake.
  • Cube and bake for 8 minutes to make scone croutons.
