Salmon Sticking to Grill

Ingredients on hand
- grilled salmon
- neutral oil
- grill brush
- spatula
- lemon
Why it happened
Fish releases when the proteins brown. If you move it too early or the grill is cool, it sticks.
The fix
- 1 leave it for 30 seconds to let the crust release, then slide a thin spatula under
- 2 add a little oil to the grill grates and the fish surface
- 3 finish with lemon to balance any torn bits
If it's still wrong
- Flake and serve in a bowl with sauce.
- Remove the skin and crisp it separately.
Prevent next time
- Preheat the grill fully and oil the grates.
- Pat the fish dry and oil lightly.
