Salmon Skin Not Crispy
Your salmon skin is flabby because it was wet or not exposed to enough heat. Dry it and crisp separately if needed.

Ingredients on hand
- cooked salmon
- paper towels
- neutral oil

Why it happened
Salmon skin is mostly collagen and fat. If it is wet or cooked over low heat, it steams instead of crisping. High heat dries and browns it quickly.
The fix
- 1remove the skin, pat it very dry, and sprinkle with salt
- 2sear skin-side down in a hot oiled skillet for 2 to 3 minutes until crisp
- 3serve the crisp skin on top of the salmon for texture
If it's still wrong
- Chop the skin and fry until crisp for a garnish.
- Discard the skin and add crunch with toasted nuts or seeds.
Prevent next time
- Pat skin dry and cook skin-side down first.
- Press gently with a spatula so the skin stays flat on the pan.
