Ingredients on hand
- roasted vegetables
- knife
- olive oil
- lemon juice
- fresh herbs
Why it happened
When vegetables exceed about 450F, sugars and proteins burn and turn bitter. Removing the burned portions and adding fat and acid rebalances the flavor.
The fix
- 1 trim off the charred edges and discard
- 2 toss with 1 tablespoon olive oil and a squeeze of lemon to soften bitterness
- 3 add fresh herbs or toasted nuts to distract from the remaining bitterness
If it's still wrong
- Chop and fold into a grain salad with a tangy dressing.
- Puree into a soup where bitterness is less noticeable.
Prevent next time
- Roast at 425F and check a few minutes early.
- Cut vegetables evenly so they cook at the same rate.

Why this works
Burnt flavors are concentrated on the surface, so trimming removes most of the bitterness. Fat and acid balance what remains and make the vegetables taste fresher.
