Ingredients on hand
- roast beef
- beef broth
- butter

Why it happened
Long cooking tightens muscle fibers and squeezes out moisture. Warm broth rehydrates the surface and adds lubrication.
The fix
- 1 slice the beef thinly against the grain
- 2 warm in 1/2 cup beef broth with 1 tablespoon butter for 2 minutes
- 3 add garlic and thyme for extra flavor
If it's still wrong
- Chop and use in sandwiches with a creamy sauce.
- Shred into a stew where it can simmer gently.
Prevent next time
- Pull at 125F to 130F and rest to medium-rare.
