Rice Burnt Bottom

  • pot of rice
  • clean pot
  • water
  • butter
  • salt

Why it happened

Burnt flavors concentrate at the bottom. Moving the unburnt rice keeps the smoky taste from spreading.

The fix

  1. 1 do not stir; scoop the good rice into a clean pot
  2. 2 add 2 tablespoons water and cover for 3 minutes to re-steam
  3. 3 discard the burnt layer

If it's still wrong

  • use the rice in fried rice with strong flavors
  • mix in fresh rice to dilute

Prevent next time

  • use low heat once simmering starts
  • keep the lid tight to prevent hot spots

Notes

Why this works

Burning happens where rice contacts the hottest surface. Transferring the unburnt portion stops the bitter compounds from spreading.
