Rice Burnt Bottom

Ingredients on hand
- pot of rice
- clean pot
- water
- butter
- salt
Why it happened
Burnt flavors concentrate at the bottom. Moving the unburnt rice keeps the smoky taste from spreading.
The fix
- 1 do not stir; scoop the good rice into a clean pot
- 2 add 2 tablespoons water and cover for 3 minutes to re-steam
- 3 discard the burnt layer
If it's still wrong
- use the rice in fried rice with strong flavors
- mix in fresh rice to dilute
Prevent next time
- use low heat once simmering starts
- keep the lid tight to prevent hot spots

Why this works
