  • cooked noodles
  • hot water
  • sesame oil
  • colander
  • scallions

Why it happened

Starch on the noodle surface glues them together as they cool. Heat and oil separate the strands.

The fix

  1. 1rinse briefly with hot water to loosen the starch
  2. 2toss with 1 teaspoon sesame oil
  3. 3reheat in broth just before serving

If it's still wrong

  • pan-fry into a noodle cake
  • serve in a stir-fry where clumps are less noticeable

Prevent next time

  • stir while boiling and drain promptly
  • toss with a little oil if holding
