Part of grains cooking fixes and gummy food fixes .
clumped noodlessticky texturedairy-free

Ingredients on hand
- cooked noodles
- hot water
- sesame oil
- colander
- scallions
Why it happened
Starch on the noodle surface glues them together as they cool. Heat and oil separate the strands.
The fix
- 1rinse briefly with hot water to loosen the starch
- 2toss with 1 teaspoon sesame oil
- 3reheat in broth just before serving
If it's still wrong
- pan-fry into a noodle cake
- serve in a stir-fry where clumps are less noticeable
Prevent next time
- stir while boiling and drain promptly
- toss with a little oil if holding
Notes
Why this works
Hot water dissolves surface starch and oil prevents re-sticking, so the noodles stay separate and silky.
Substitutions
- sesame oil→neutral oil
- hot water→broth
