Why it happened
Radish heat comes from isothiocyanates (the same compounds in mustard and horseradish), which form when the radish tissue is cut or damaged. These compounds are water-soluble, so a cold-water soak leaches them out by osmosis. Heat converts them into a range of sweeter, mellower molecules — cooked radish tastes like a mild turnip compared to its raw heat.
The fix
- 1Slice radishes thin and submerge in a bowl of ice water with 1/2 teaspoon salt for 20 minutes — osmosis draws out the pungent isothiocyanates
- 2Drain, dry, and taste — the heat should be reduced by half or more
- 3Alternatively, sauté whole or halved radishes in butter over medium-high heat for 3–4 minutes — heat converts isothiocyanates into sweeter compounds and the radish mellows dramatically
- 4Dress cooked or soaked radishes with lemon juice and salt while still warm

Prevent next time
- Buy radishes in season (spring and fall) — summer-grown radishes are consistently hotter and pithy.
- Store radishes with their greens removed; the greens draw moisture and concentrate flavor in the bulb, making older radishes spicier.
