Ingredients on hand
- cooked quinoa
- water
- olive oil
- lemon juice
- salt
Why it happened
Saponins coat quinoa and taste bitter. A rinse removes the residue, and fat and acid rebalance the flavor.
The fix
- 1 rinse the cooked quinoa under warm water and drain well
- 2 toss with 1 teaspoon olive oil and lemon juice
- 3 season with salt to balance
If it's still wrong
- mix into a salad with strong herbs and dressing
- serve with a flavorful sauce
Prevent next time
- rinse quinoa thoroughly before cooking
- use a fine-mesh sieve for better rinsing
