Quinoa Bitter

  • cooked quinoa
  • water
  • olive oil
  • lemon juice
  • salt

Why it happened

Saponins coat quinoa and taste bitter. A rinse removes the residue, and fat and acid rebalance the flavor.

The fix

  1. 1 rinse the cooked quinoa under warm water and drain well
  2. 2 toss with 1 teaspoon olive oil and lemon juice
  3. 3 season with salt to balance

  • mix into a salad with strong herbs and dressing
  • serve with a flavorful sauce
