Why it happened
Quick breads rely on starch gelatinization to set. If the center never reaches temperature or is cut hot, it stays gummy.
The fix
- 1 slice the loaf and toast at 325F for 8 minutes to dry the interior
- 2 spread with butter or nut butter to improve mouthfeel
- 3 serve with berries or yogurt to balance the texture
If it's still wrong
- Cube and bake at 350F for 10 minutes for loaf croutons.
- Turn into French toast for a custardy texture.
Prevent next time
- Bake until a skewer comes out with moist crumbs, not wet batter.
- Let the loaf cool at least 45 minutes before slicing.
