Pulled Pork Dry

  • pulled pork
  • apple cider or stock
  • barbecue sauce
  • butter
  • foil

Why it happened

Shredded meat has a lot of surface area, so it dries quickly. Warm liquid and fat rehydrate the fibers.

The fix

  1. 1warm 1/2 cup cider or stock with 1 tablespoon butter
  2. 2toss the pork with the warm liquid and 2 tablespoons barbecue sauce
  3. 3cover with foil and rest 5 minutes to absorb

If it's still wrong

  • Serve in a saucy taco or quesadilla.
  • Mix with coleslaw and mayo for moisture.
