Ingredients on hand
- pulled pork
- apple cider or stock
- barbecue sauce
- butter
- foil
Why it happened
Shredded meat has a lot of surface area, so it dries quickly. Warm liquid and fat rehydrate the fibers.
The fix
- 1 warm 1/2 cup cider or stock with 1 tablespoon butter
- 2 toss the pork with the warm liquid and 2 tablespoons barbecue sauce
- 3 cover with foil and rest 5 minutes to absorb
If it's still wrong
- Serve in a saucy taco or quesadilla.
- Mix with coleslaw and mayo for moisture.

- Save cooking juices and toss with the meat after shredding.
- Rest the shoulder before pulling to retain moisture.
