Why it happened
High heat browns the outside before the heat reaches the center. Low oven heat finishes cooking evenly.
The fix
- 1 cover with foil and bake at 300F for 10 minutes
- 2 check for 145F in the center
- 3 rest 5 minutes before slicing
If it's still wrong
- slice thin and simmer in sauce
- chop and stir-fry with vegetables
Prevent next time
- sear briefly then finish in a low oven
- use a thermometer instead of timing alone
