  • thermometer
  • butter

Why it happened

High heat browns the outside before the heat reaches the center. Low oven heat finishes cooking evenly.

The fix

  1. 1 cover with foil and bake at 300F for 10 minutes
  2. 2 check for 145F in the center
  3. 3 rest 5 minutes before slicing

If it's still wrong

  • slice thin and simmer in sauce
  • chop and stir-fry with vegetables

Prevent next time

  • sear briefly then finish in a low oven
  • use a thermometer instead of timing alone
