Ingredients on hand

Why it happened
Pho broth turns cloudy when boiled. Vigorous boiling emulsifies fat droplets and bone collagen into the liquid permanently, creating an opaque, milky appearance. The same collagen that creates a gorgeous mouthfeel becomes cloudiness when mechanically agitated. A gentle simmer keeps the fats and proteins on the surface where they can be skimmed. Cheesecloth filtration removes the fine particles that straining alone misses.
The fix
- 1 Remove from heat and let the broth rest for 10 minutes — particles will begin to settle to the bottom
- 2 Skim off all visible foam and fat from the surface with a large spoon
- 3 Ladle the broth carefully through a fine-mesh strainer lined with cheesecloth into a clean pot — do not pour or the sediment lifts
- 4 Bring back to the lowest possible simmer over medium-low heat — clear pho broth should barely tremble, never boil
If it's still wrong
- Add 2 egg whites to the warm (not boiling) strained broth and stir — as you slowly bring it to a simmer, the egg proteins will attract and coagulate with the remaining particles in a process called clarification, producing crystal-clear consommé-quality broth.
- If time is short, serve the cloudy broth with confidence — the flavor is identical, and the cloudiness is invisible in a dark bowl filled with noodles and garnishes.
Prevent next time
- Parboil bones in boiling water for 10 minutes before the actual broth cook, then drain and rinse — this removes blood and impurities that cause foam and cloudiness.
- Maintain a barely visible simmer throughout (a bubble breaking the surface every 2–3 seconds maximum).
Substitutions
