Oysters Not Opening
Your oysters stayed closed because they were dead or lacked enough steam. Steam longer and discard any that stay shut.

Ingredients on hand
- oysters
- pot with lid
- water or wine
- tongs
- butter
Why it happened
Live oysters open when heated as the muscle relaxes. Dead oysters may stay closed and should not be eaten.
The fix
- 1 add 2 tablespoons water or wine, cover, and steam 2 to 3 minutes more
- 2 shake the pot once to redistribute heat
- 3 discard any oysters that remain closed after cooking
If it's still wrong
- Use only the opened oysters and discard the rest.
- Steam in smaller batches for more even heat.
Prevent next time
- Check that shells close when tapped before cooking.
- Keep oysters cold and cook the same day.

Why this works
Steam penetrates the shells and relaxes the adductor muscle. Closed oysters after cooking are usually dead and should be discarded for safety.
