Ingredients on hand
- cooked orzo
- hot water
- olive oil
- butter
- parsley
Why it happened
Orzo releases surface starch that glues the grains together. Heat and fat loosen and coat the starch.
The fix
- 1 drizzle 2 tablespoons hot water over the orzo and stir to loosen
- 2 add 1 teaspoon olive oil or butter and toss to separate
- 3 finish with parsley and salt
If it's still wrong
- Spread on a sheet pan and toast at 350F for 5 minutes.
- Turn into a baked orzo casserole with sauce.
Prevent next time
- Stir once or twice while cooking.
- Toss with a little oil right after draining.
