Orzo Clumpy

Ingredients on hand

  • cooked orzo
  • hot water
  • olive oil
  • butter
  • parsley

Why it happened

Orzo releases surface starch that glues the grains together. Heat and fat loosen and coat the starch.

The fix

  1. 1 drizzle 2 tablespoons hot water over the orzo and stir to loosen
  2. 2 add 1 teaspoon olive oil or butter and toss to separate
  3. 3 finish with parsley and salt

If it's still wrong

  • Spread on a sheet pan and toast at 350F for 5 minutes.
  • Turn into a baked orzo casserole with sauce.

Prevent next time

  • Stir once or twice while cooking.
  • Toss with a little oil right after draining.
