Burnt Onions
Your onions went from brown to bitter because the heat was too high. Remove the burnt bits and soften the rest.

Ingredients on hand
- burnt onions
- butter
- water
- sugar
- vinegar
Why it happened
Burnt sugars turn bitter. Removing the most charred pieces and adding a little moisture makes the rest usable.
The fix
- 1 remove the darkest pieces and discard
- 2 add 2 tablespoons water and 1 teaspoon butter to soften
- 3 add a pinch of sugar and a few drops of vinegar to balance bitterness
If it's still wrong
- Blend into a sauce where bitterness is less noticeable.
- Start a fresh small batch and mix to dilute.
Prevent next time
- Lower the heat and stir more often.
- Add a splash of water if the pan gets too dry.

Why this works
The bitterness is concentrated in the char. Removing it and rehydrating the remaining onions restores sweetness and makes them taste less harsh.
