Why it happened

High heat over-sets the egg proteins. Adding fat and a short steam softens the texture and makes it feel creamy.

The fix

  1. 1 fold in 1 tablespoon butter or soft cheese while warm
  2. 2 cover for 30 seconds to soften the interior
  3. 3 finish with herbs to brighten

If it's still wrong

  • turn into a scramble with sauce
  • slice and serve in a sandwich

Prevent next time

  • cook over medium-low heat
  • remove while still slightly glossy
