Mussels Not Opening
Your mussels stayed closed because they were dead before cooking or did not steam long enough. Steam a little longer and discard any that stay shut.

Ingredients on hand
- mussels
- white wine or water
- pot with lid
- garlic
- butter
Why it happened
Live mussels open when heated as the muscle relaxes. If a mussel is dead, it may stay closed and should not be eaten.
The fix
- 1 add 2 tablespoons wine or water, cover, and steam 2 to 3 minutes more
- 2 shake the pot once to redistribute heat and steam
- 3 discard any mussels that remain closed after cooking
If it's still wrong
- Use only the opened mussels and discard the rest.
- Add more liquid and steam in smaller batches next time.
Prevent next time
- Tap open shells; live mussels should close within a few seconds.
- Cook in a single layer for even steam exposure.
Notes
Why this works
Mussels open when the adductor muscle relaxes with heat. A bit more steam and movement helps even out the heat, but closed shells after cooking usually indicate a dead mussel and should be discarded for safety.
