Why it happened
Fat renders during baking. Removing surface fat and finishing under the broiler reduces greasiness.
The fix
- 1 blot the surface with paper towels to lift fat
- 2 broil for 2 minutes to render more fat
- 3 serve with mashed potatoes or bread to absorb excess grease
If it's still wrong
- slice thin and serve with a bright sauce
- crumble into pasta or tacos
Prevent next time
- use a leaner mix and add binders
- bake on a rack so fat drains away
