Gritty Greens

Your greens feel sandy because grit was not washed out. Rinse again and re-warm gently.

  1. 1 transfer greens to a bowl of cold water and swish gently
  2. 2 lift the greens out (do not pour) and spin dry
  3. 3 re-warm in a skillet with 1 teaspoon olive oil for 1 minute

If it's still wrong

  • Chop and blend into pesto or soup, leaving grit at the bottom of the blender.
  • Serve with a thick sauce to mask minor grit.

Prevent next time

  • Wash greens in two changes of water before cooking.
  • Spin dry so grit does not cling to wet leaves.

Notes

Why this works

Grit is heavier than water, so it sinks. Swishing in water frees the grit and lifting the greens out prevents it from resettling on the leaves.
