Ingredients on hand

  • cooked green beans
  • skillet
  • olive oil
  • lemon juice
  • garlic

Why it happened

Overcooking breaks down cell walls and dulls chlorophyll. High heat evaporates moisture and adds new texture.

The fix

  1. 1 saute in a hot skillet with 1 tablespoon oil for 2 minutes
  2. 2 add garlic for 30 seconds, then remove from heat
  3. 3 finish with lemon juice to brighten color and flavor
