Green Beans Wrinkled
Your green beans are wrinkled and dull because they overcooked. Re-crisp with high heat and acid.

Ingredients on hand
- cooked green beans
- skillet
- olive oil
- lemon juice
- garlic
Why it happened
Overcooking breaks down cell walls and dulls chlorophyll. High heat evaporates moisture and adds new texture.
The fix
- 1 saute in a hot skillet with 1 tablespoon oil for 2 minutes
- 2 add garlic for 30 seconds, then remove from heat
- 3 finish with lemon juice to brighten color and flavor
If it's still wrong
- Toss into a stir-fry with a strong sauce.
- Chop and add to a salad for texture mix.
Prevent next time
- Blanch for 2 to 3 minutes and shock in ice water.
- Finish quickly in a hot pan, not a long boil.
Notes
Why this works
A quick hot saute drives off excess moisture and brings back some bite. Acid brightens flavor and makes the beans taste fresher.
