Granola Too Clumpy

Ingredients on hand
- baked granola
- sheet pan
- oven
- salt
- dried fruit
Why it happened
Excess sugar syrup glues oats together. Re-baking dries the surface so the clusters break cleanly.
The fix
- 1 break the granola into smaller pieces and spread on a sheet pan
- 2 bake at 300F for 6 minutes, stirring halfway, to re-crisp evenly
- 3 sprinkle with a pinch of salt and add dried fruit after cooling
If it's still wrong
- Pulse briefly in a food processor for finer granola.
- Use as a crumble topping for yogurt or fruit.
Prevent next time
- Use just enough syrup to coat, not pool.
- Spread in a thin, loose layer before baking.
