Granola Not Crispy

Soft, chewy homemade granola that won't crisp needs lower heat for longer, or wasn't left to cool properly — here's how to fix it and finish with a satisfying crunch.

Ingredients on hand

  • rolled oats
  • nuts and seeds
  • honey or maple syrup
  • coconut oil or neutral oil
  • brown sugar
  • vanilla
  • salt
  • cinnamon

Why it happened

Granola crisps through dehydration — the sugars caramelize and harden as water evaporates from the oats. Granola that looks soft when hot but crisps when cool is ready; granola that's still soft after fully cooling needs more drying time in the oven. Sugars bind the oats together as they cool, creating the characteristic crunchy clusters. Pulling it too early, stirring in the final phase, or adding too much wet sweetener prevents cluster formation.

The fix

  1. 1Return the soft granola to a 300°F oven and bake for an additional 15–20 minutes, stirring every 5 minutes — low and slow crisps without burning
  2. 2Do not stir the granola during the last 10 minutes of baking — undisturbed granola forms large, crispy clusters
  3. 3Remove from the oven and do not touch for at least 30 minutes — granola crisps as it cools, not while it's hot. If it's still soft when hot, it will crisp when cool
  4. 4Spread in a thin single layer if it was piled thick — thick granola traps steam

If it's still wrong

  • Spread on a baking sheet and microwave in 2-minute bursts on medium power — microwaves can dehydrate granola, though the result is different from oven-crisped.
  • Use the chewy granola as a topping for yogurt bowls and smoothies where a softer texture actually works well.

Prevent next time

  • Bake at 300–325°F rather than 350°F — higher temperatures burn the surface before the interior dries.
  • Let granola cool completely on the baking sheet undisturbed before breaking into clusters — touching it while warm prevents large cluster formation.
