Granola Burnt
Bitter, dark granola has burnt sugars throughout — here's how to salvage what's rescuable and prevent burning next time.

Why it happened
Granola sweetness comes from oat starches converting to dextrins at 300–325°F, with additional caramelization of added sugars. Above 350°F, sugars pyrolyze into bitter acrolein and furfural compounds. A sheet pan's edges and corners are always hotter than the center, causing uneven burning. The bitter compounds are concentrated in the carbonized surface of each grain — sifting removes the loose burnt powder while intact clusters (even dark ones) often have a caramelized exterior over a properly cooked interior.
The fix
- 1Let the granola cool completely — warm granola smells more bitter than cool granola and it's hard to assess accurately when hot
- 2Sift through a fine-mesh strainer, shaking out fine burnt crumbs — the smallest particles have the highest surface area and the most concentrated bitterness
- 3Discard visibly black clusters; taste medium-brown clusters — they may be deeply caramelized (good) rather than burnt (bad)
- 4Toss remaining granola with 1 teaspoon honey while still slightly warm — the fresh sweetness suppresses bitter aftertaste
If it's still wrong
- Mix heavily burnt granola with fresh, unbaked granola and bake again at a lower temperature — the fresh granola dilutes the burnt notes.
- Use as an ice cream topping where the bitter notes complement vanilla or chocolate ice cream's sweetness.
Prevent next time
- Bake at 300–325°F rather than 350°F — the lower temperature produces evenly caramelized granola with far less burning risk.
- Set a timer for 10 minutes and stir thoroughly between each interval, rotating the pan to move the edges to the center.
