Watery Grain Salad

Ingredients on hand
- grain salad (farro, quinoa, barley, or similar)
- colander
- extra-virgin olive oil
- lemon juice or red wine vinegar
- fresh herbs (parsley, basil, or mint)
- flaky salt

Why it happened
Grain salads turn watery from two sources. Hot grains release steam as they cool, and the condensation dilutes the dressing. Vegetables (especially tomatoes, cucumbers, and fresh herbs) also release water through osmosis once dressed with salt. The combined effect is a thin, flavorless puddle at the bottom of the bowl. Draining removes this water. Re-dressing is always necessary after draining because some dressing drains out with the water.
The fix
- 1Transfer to a colander and let drain for 3 minutes — don't press, just let gravity remove the excess liquid
- 2Transfer to a clean bowl and immediately dress with 1 tablespoon olive oil and 1 teaspoon lemon juice — fresh dressing on drained grains is far more effective than adding to a watery base
- 3Add plenty of fresh herbs, flaky salt, and cracked pepper — these restore the flavor intensity that was diluted with the liquid
- 4Fold in any crunchy elements (toasted nuts, seeds, croutons) just before serving to provide textural contrast
If it's still wrong
- Drain completely and serve the grain salad stuffed inside a halved avocado or hollowed tomato — the vessel contains the liquid and adds flavor.
- Serve with a slotted spoon so diners can leave the liquid behind.

- Always cool grains completely before dressing — hot grains release steam that condenses into the dressing.
- Dress vegetables with salt and let drain 10 minutes before adding to the salad — pre-draining removes osmotic water before it reaches the grains.
