  • fish fillet
  • water
  • skillet
  • lid
  • butter

Why it happened

High heat cooks the edges first. A brief steam finish cooks the center without further burning the surface.

The fix

  1. 1 add 2 tablespoons water to the skillet and cover
  2. 2 steam on low heat for 3 minutes until opaque
  3. 3 finish with butter to soften the surface

If it's still wrong

  • flake into tacos or a rice bowl
  • serve with a sauce to mask uneven texture

Prevent next time

  • use medium heat and cook longer
  • choose evenly thick fillets
