High heat cooks the edges first. A brief steam finish cooks the center without further burning the surface.
The fix
- 1 add 2 tablespoons water to the skillet and cover
- 2 steam on low heat for 3 minutes until opaque
- 3 finish with butter to soften the surface
If it's still wrong
- flake into tacos or a rice bowl
