Fish Tacos Soggy

Ingredients on hand

Why it happened
Fish tacos get soggy when steam from hot fish condenses on the tortilla, or when sauces and slaws are added to the tortilla before serving. Corn tortillas are particularly vulnerable because they're thinner and more porous than flour tortillas. Double-layering corn tortillas (the traditional approach) provides structural backup. The wire rack drainage allows steam to escape from all sides simultaneously, reducing the moisture that causes sogginess at assembly.
The fix
- 1 Re-crisp corn tortillas in a dry skillet for 30 seconds per side — this restores their structure to hold wet fillings
- 2 Drain cooked fish on a wire rack, not paper towels — wire racks allow steam to escape from below as well as above
- 3 Pat fish completely dry with paper towels before assembling
- 4 Assemble tacos at the table, not in advance — soggy tacos are always an assembly-timing problem
- 5 Apply sauce on the side rather than inside, or use a thin swipe rather than a generous layer
If it's still wrong
- Serve as a deconstructed fish taco bowl — all the ingredients over rice with crispy tortilla strips as a topping. The bowl format eliminates the sogginess problem.
- Warm tortillas over an open gas flame for 15 seconds per side — the charring creates a slightly moisture-resistant crust on the tortilla.
Prevent next time
- Double corn tortillas (stack two) for each taco — the inner tortilla cushions moisture from the fish, and the outer tortilla stays dry.
- Keep fish, tortillas, and toppings in separate bowls at serving and assemble individually at the table.
