Ingredients on hand
- cooked couscous
- hot water or stock
- butter or olive oil
- fork
- herbs
Why it happened
Couscous is tiny pasta that needs even hydration. If liquid is uneven, starch on the surface glues grains together. Gentle steam and oil break them apart.
The fix
- 1 sprinkle 2 tablespoons hot water or stock over the couscous
- 2 cover and steam for 2 minutes to rehydrate evenly
- 3 fluff with a fork and drizzle with 1 teaspoon oil to separate grains
If it's still wrong
- Spread on a sheet pan and bake at 350F for 5 minutes to dry.
- Toss with vegetables and serve as a warm salad.
Prevent next time
- Pour boiling liquid evenly and cover immediately.
- Fluff as soon as it finishes steaming.

Why this works
