Cookies Burnt Bottoms

Ingredients on hand
- baked cookies
- microplane or grater
- sheet pan

Why it happened
Dark pans and preheated sheets over-brown the cookie base before the center finishes. Removing the charred layer eliminates most of the bitter compounds.
The fix
- 1 gently grate or scrape off the burnt bottoms with a microplane
- 2 warm the cookies in a 300F oven for 3 minutes to soften and rebalance
- 3 serve with ice cream or milk to mute any remaining bitterness
