fish falling apart flaky pieces gluten-free high-protein
Ingredients on hand
- cooked cod
- butter
- lemon juice
- parsley
- warm stock
Why it happened
Cod is delicate and flakes easily once the proteins set. Warm liquid and fat help the flakes cling and feel moist.
The fix
- 1 gather the pieces and warm gently in 1/4 cup stock for 1 minute
- 2 add 1 tablespoon butter and lemon juice to bind the pieces
- 3 serve in a bowl or over rice so the flakes stay together
If it's still wrong
- Flake into tacos with sauce and slaw.
- Mix into a fish salad with mayo.
Prevent next time
- Cook just until the fish turns opaque and flakes with light pressure.
- Use a fish spatula and minimize handling.
Notes
Why this works
Moist heat prevents further drying, and fat helps the flakes adhere. Serving in a saucy format keeps the delicate pieces together.
Substitutions
- butter → olive oil
- stock → water
