- chili
- tomato paste
- cornmeal
- simmering pot

Why it happened
Chili thickens through reduction and suspended solids. Tomato paste and cornmeal add starch that binds the liquid.
The fix
- 1 simmer uncovered for 10 minutes to reduce
- 2 whisk in 1 tablespoon tomato paste for body
- 3 stir in 1 teaspoon cornmeal and simmer 2 minutes
If it's still wrong
- Blend in 1/2 cup cooked beans for thickness.
- Serve over rice to absorb extra liquid.

- Brown meat well to reduce liquid.
- Avoid adding extra water early.
