Chili Too Thin

Ingredients on hand

  • chili
  • tomato paste
  • cornmeal
  • simmering pot
  • salt

Why it happened

Chili thickens through reduction and suspended solids. Tomato paste and cornmeal add starch that binds the liquid.

The fix

  1. 1 simmer uncovered for 10 minutes to reduce
  2. 2 whisk in 1 tablespoon tomato paste for body
  3. 3 stir in 1 teaspoon cornmeal and simmer 2 minutes

If it's still wrong

  • Blend in 1/2 cup cooked beans for thickness.
  • Serve over rice to absorb extra liquid.

  • Brown meat well to reduce liquid.
  • Avoid adding extra water early.
