Why it happened
Dark meat needs a higher internal temperature for tenderness. Gentle oven heat finishes cooking without drying the outside.
The fix
- 1cover with foil and bake at 325F for 10 minutes
- 2check for 175F near the bone
- 3rest 5 minutes before serving
If it's still wrong
- slice and simmer in a sauce until tender
- shred for tacos or bowls
