Why it happened

Dark meat needs a higher internal temperature for tenderness. Gentle oven heat finishes cooking without drying the outside.

The fix

  1. 1cover with foil and bake at 325F for 10 minutes
  2. 2check for 175F near the bone
  3. 3rest 5 minutes before serving

  • slice and simmer in a sauce until tender
  • shred for tacos or bowls

  • use a thermometer and target 175F
  • sear first, then finish at lower heat
